What can be done with AUBERGINES?

The sauce made with BAKED AUBERGINES is a fantastic way to consume a rich and healthy vegetable, ideal for seasoning our PASTA / RISOTTO AND PIZZA recipes instead of the classic tomato sauce.

We can keep it in a container in the fridge for 3 days or we can keep it vacuum-packed for 10 days or freeze it.

  • 1. Wash and cut the aubergines in half
    2. With a knife with a fine point, we make some horizontal and vertical cuts without actually cutting the skin of the aubergines
    3. Place baking paper on a tray to prevent them from sticking to the tray, add fresh rosemary and a trickle of oil
    4. Bake for 20 / 25 minutes at 180 °C / 356 °F
    TIP: If you are going to cook several types of vegetables at the same time, I recommend making trays with the same type of vegetables to make it easier to monitor cooking and to be able to take it out of the oven at its optimum point.
    5. Remove from the oven, remove the rosemary and with a pan remove the pulp, add a little oil, salt and garlic powder
    6. We crush until we get a smooth texture without lumps
    7. Store in a container and keep in the fridge for 3 days if you want it to last longer or freeze the sauce without ice crystals forming. I RECOMMEND YOU KEEP IT VACUUM
