  • 1. We start by undoing the fresh yeast in the water
    2. Add the flour little by little mixing with a spoon
    3. After adding half the flour, add the salt and oil and continue mixing until all the flour is incorporated (reserve a tablespoon to sprinkle the table)
    4. We dump our dough on the table and we will work it with our hands kneading with movements from top to bottom for 5 minutes
    5. Let the dough relax covered with a cloth on the table for 15 minutes
    6. With the help of a spatula, make some folds from top to bottom for 2 minutes, cover and let the dough relax for 10 minutes (we will have to repeat this relaxation process and folds of our dough 3 times)
    7. We already have our smooth dough without lumps
    8. Store our dough at room temperature covered in a container greased with oil until doubled in size 1:30/2h
    9. After 1:30 a.m. / 2 a.m., sprinkle the table with corn grits, pour out our dough and make 4 reinforcement folds, folding the dough like a calzone

    13. Bake in a hot oven in the lowest part in static mode (heat up and down) at 240°C / 464°F for 13/15 minutes
    14. Take out the pizza, add the mozzarella and return to the oven for 3/5 minutes, raising the tray halfway up
    15. We decorate with fresh basil and a trickle of extra virgin olive oil and we already have our delicious pizza 😋 Buon appetito
