How to make italian focaccia

Today we are going to prepare a delicious ITALIAN FOCACCIA / PIZZA BREAD with 80% hydration and 24-hour fermentation, we will obtain a very digestible and light dough, ideal to replace bread or prepare GOURMETS FOCACCIAS.

Thanks to its few and simple natural ingredients, focaccia is ideal to complement vegetarian and vegan diets.

Instructions
 

  • 1. Add the flour, the fresh yeast dissolved in the water together with the oil with the help of a fork, mix for a minute, add the salt and knead for another minute
    2. Cover and let the dough relax without moving for 10 minutes
    3. Sprinkle the table with corn grits, pour out our dough and make some reinforcement folds (watch video)
    4. We cover and let the dough rest for 15 minutes, we repeat twice more fold - rest more folds
    5. We spread a container with a little oil, put our dough and keep it in the fridge in the lowest part for 24 / 32 hours
    6. We take our dough out of the fridge and leave it at room temperature for 15 minutes
    7. We pour out on the table sprinkled with corn grits, divide it into three equal parts
    8. We lengthen with the tips of the fingers and finish adjusting on a lightly oiled baking tray
    9. Let ferment covered at room temperature for an hour and a half two hours
    10. Add a little virgin olive oil and with your fingers make the characteristic holes of the focaccia
    11. Bake for 12 -14 minutes in a hot oven at 250 °C / 456 °F in static mode, the first 6 minutes in the lowest part of the oven and the remaining time we raise the tray to a medium height
    12. We remove from the oven, put our focaccia on top of a rack to dissipate the moisture from the base for 5 minutes, we can now cut and enjoy
