  • 1. Heat plenty of salt water
    2. When the water is boiling, add the macaroni and cook them for the time indicated on the package (pasta al dente).
    3. While they are cooking, heat a large frying pan, add the puttanesca sauce with a little of the pasta cooking water or a little natural tomato sauce.
    4. Lower the heat to a minimum and let it cook gently, reducing the juices, while the pasta finishes cooking.
    5. Put the drained macaroni in the pan and continue cooking for 1 minute in the sauce, adding a little of the cooking water from the pasta if necessary to bind the sauce better.
    6.Stir, add chopped fresh basil, capers, chopped olives and chopped cherry tomatoes
    7.Remove from the heat as soon as the pasta is ready.
    8.Plate, sprinkle with a good Parmesan 24 months and if you like it spicy, add a generous thread of homemade spicy oil,
