Today we are preparing a land and sea risotto / rice , we will use asparagus and prawns, delicious ingredients that go together perfectly, it is an ideal recipe to prepare when you have guests or simply when you feel like having a very healthy and rich single dish for lunch or dinner

  • 1. We clean and cut the asparagus into 1 cm pieces, we reserve the tips for later
    2. Sauté the asparagus with a sauce of onion over medium heat in a saucepan with high edges for 5 minutes
    3. We regulate salt and pepper and cook for 5 more minutes
    4. Add the rice and toast it for 3 minutes
    5. We can add a small glass of white wine and wait for the alcohol to evaporate or continue directly with the homemade vegetable broth
    6. We will add the broth little by little (it is very important that the broth is hot so as not to alter the cooking temperature of the rice)
    7. We will cook the rice for the time indicated on the package, I recommend trying it a couple of minutes before
    8. After 10 minutes we add the tips of the asparagus, in this way they will be al dente
    9. When there are 2 minutes left, add the prawn tails (if we use frozen prawns, they must be defrosted beforehand)
    10. THE SECRET of a GOOD RISOTTO: turn off the heat, add the butter and Parmesan cheese, stir quickly and let the rice relax for 5 minutes without moving
    Serve and add ground black pepper
