  • 1. We heat 5 liters of water in a pot with high edges
    2. When the water is boiling, add the salt little by little, making sure that the water does not splash on us.
    3. Add the Tagliatelle fresche made by hand and cook them for 2/3 minutes, mixing from time to time
    4. While they are cooking, heat a large frying pan, add the homemade bolognese sauce with a little of the pasta cooking water
    5. Drain the pasta (reserving a little of the cooking water) put it in the pan and stir well in the sauce, adding a little of the pasta cooking water if necessary to bind the sauce better.
    6. Remove from heat, plate, sprinkle with a good Parmesan 24 months.
