  • 1. We will start by cutting the aubergines into slices of half a centimeter
    2. We put it in a colander, sprinkle with salt and let it sweat for 1 hour. In this way, if they are bitter, we remove it.
    3. After this time we wash it under a tap and dry it well with an absorbent paper
    4. place it on a tray with a thread of oil and bake it for 10/12 minutes at 180º/356 Fahrenheit
    5. We start by putting a little tomato sauce on the tray, add the aubergine slices, tomato sauce, Parmesan cheese and mozzarella
    6. We repeat making another layer changing the direction of the aubergines
    7. In the last layer, we put the aubergines, we press so that it is well compacted, we add tomato sauce and Parmesan cheese
    8. Bake at 180º/356 Fahrenheit for 30 to 35 minutes (the first 20 minutes we can cover the tray with aluminum foil and uncover the last 15 minutes to form a nice gratin)
    9. Remove from the oven, wait for it to cool down before cutting and serving
