How to make vegetarian cannelloni

Cannelloni is a classic - traditional first dish that is eaten with the family on Sundays or Christmas, they can be filled with many different fillings, the most typical being meat.

Today I propose a delicious vegetarian recipe, ideal for all those who are looking for a delicious alternative to meat.

  • 1. We cut the vegetables into very small cubes (potatoes, carrots, red and yellow pepper and zucchini)
    2. We fry in a sauce of onion over medium heat for 15 minutes
    3. While we prepare the béchamel with parmesan, once ready we cover it with transparent film and reserve
    4. For the VEGAN BOLOGNESE filling: add our ragu to a bowl along with 3 tablespoons of bechamel, mix well and place our filling in a disposable pastry bag with a 12-14 millimeter round tip
    5. For the GARDEN VEGETABLES filling: add the vegetables to a bowl along with 3 tablespoons of bechamel, mix well and place our filling in a disposable pastry bag with a 12-14 millimeter round tip
    6. Grease a large or 2 medium oven-safe bowls with butter or margarine, spread 2 tablespoons of homemade tomato sauce on the bottom
    7. We begin to fill the cannelloni, we will fill half, turn it over and fill the other half and we will arrange them in order on the tray
    8. Finished filling, cover with the bechamel and sprinkle with Parmesan
    9. We cover the tray with aluminum foil and we are going to bake it for 40 minutes at 200 °C/392 °F
    10. Remove the aluminum foil and continue baking until the desired gratin is achieved
