  • 1. Drain and cut the dried tomatoes and jalapeños into very small cubes.
    2. Peel and cut the avocados and cut them into cubes, put them in a bowl together with the tomatoes.
    3. Add the soy sauce, the lime juice, the finely chopped mint, mix well and store in the fridge for 30 minutes so that all the flavors meld.
    4. Put the Chinese noodles in hot oil for 2 seconds (they will puff up right away), drain and set aside.
    5. Place a steel ring in the middle of a plate and fill with a spoon, pressing down a bit to make it compact.
    6. Unmold and decorate with Chinese noodles and accompany with some toast or homemade focaccia.
