  • 1. Cook the tagliolini in abundant salted water for 2/3 minutes
    2. In a salten we heat the cheese fonduta with a little of the pasta cooking water
    3. Drain the pasta very al dente and finish cooking in the sauce for 1 minute, gently stirring in a circular motion, to butter the pasta (if necessary you can add more pasta cooking water)
    4. We heat the pumpkin sauce
    5. At the bottom of the plate we distribute the pumpkin sauce, pasta and finish with some fresh shoots of horseradish.
