What can be done with pumpkin?

The sauce with BAKED PUMPKIN is an excellent way to use a seasonal vegetable, thanks to its delicate flavor and texture we can use it to season PASTA / RISOTTO AND PIZZA

TIP: I recommend cooking it in the oven to maintain its properties and delicious flavor (being a vegetable rich in water, it cooks quickly and we can take advantage of the oven while it heats up and then bake our favorite pizza and focaccia recipes)

We can keep it in a container in the fridge for 3 days聽or we can keep it vacuum-packed for 10 days or freeze it.

  • 1. Wash and cut the pumpkin with the skin into pieces
    2. Add oil, salt, fresh rosemary and mix well
    3. Place baking paper on a tray to prevent it from sticking to the tray
    4. If the vegetables are packed too tightly together, they won't be very crispy or browned. Give him space.
    5. Bake for 15 / 17 minutes at 180 掳C / 356 掳F (the vegetables must be al dente)
    TIP: Your vegetables are done when you can easily pierce them with a fork and they are just barely browned. If you are going to cook several types of vegetables at the same time, I recommend making trays with the same type of vegetables to make it easier to monitor cooking and to be able to take it out of the oven at its optimum point.
    6. Stir from time to time, especially if your oven doesn't bake evenly
    7. Take it out of the oven, remove the skin and the rosemary, add a little oil and salt to your liking and grind until you get a smooth texture, without lumps.
    8. Store in a container and keep in the fridge for 3 days if you want it to last longer or freeze the sauce without ice crystals forming. I RECOMMEND YOU KEEP IT VACUUM
