Instructions
 

  • 1. We put in a hot pan 3 tablespoons of grated Parmesan cheese.
    2. We wait for it to start melting and with the help of a spatula we take out the circle of Parmesan and roll it into a steel cylinder.
    3. Once cold, we can gently unmold it.
    4. Rare the filling: in a bowl add ricotta cheese, black pepper, 1 pinch of maldon salt and 2 tablespoons of tomato paste,
    5. We mix well.
    6. Fill a disposable pastry bag with the filling.
    7. Fill the eclairs and coat the tips with ground pistachios.
