How to make creme brulee / flavored Catalan cream

Flavored CREME BRULLE/ Catalan cream, depending on the place of origin, is flavored with vanilla, citrus or liqueurs.

Today I present to you a version flavored with MARSALA WINE, a typical Sicilian liquor that is used to make tiramisu.

  • 1. In a medium saucepan add the milk, cream and vanilla seeds (open and scrape the seeds out), bring to a gentle boil.
    2. While in a bowl we beat the egg yolks, sugar and marsala wine and mix gently (they do not have to be foamy)
    3. Remove the vanilla pod and add little by little to the egg cream, mixing until obtaining a homogeneous compound
    4. Filter our cream through a fine mesh strainer and fill 6 coconuts with a 150 ml capacity with high edges
    5. Place our coconuts in a tray with high edges, fill halfway with water and cook in a bain-marie in a hot oven at 145 °C / 284 °F for 65 / 70 minutes until the upper part is golden and compact.
    6. We take out our coconuts, sprinkle with sugar and burn with a blowtorch (if you don't have a blowtorch you can grill them in the oven)
    7. Heat a little rum with sugar when it comes to a boil, turn off the heat and set it on fire (in this process, safety measures must be monitored as much as possible) add a spoonful of creme brulee on top and serve with the lights off so that see the blue flame
