How to make homemade detox pizza dough

Today we prepare a delicious DETOX PIZZA with ACTIVATED COCONUT CHARCOAL, a natural additive that will give our HOMEMADE DOUGH a beautiful black color that will contrast with the white of the buffalo mozzarella and the various reddish tones of the tricolor Cherry tomatoes.

Instructions
 

  • 1. We mix the water with the flour (there should not be any loose flour left)
    2. The resulting dough will be quite ugly and with lumps, this does not matter, we cover with transparent film and leave to ferment at room temperature between 3 and 6 hours
    3. 4 hours have passed and we already have our dough, which is more elastic
    4. Little by little we will add the fresh yeast dissolved in the water, oil and 1 tablespoon of activated carbon and we will knead with the mixer with rods to knead
    5. Next, add the oil and salt and knead until you get a smooth dough without lumps
    6. The total time of kneading with an electric mixer usually lasts 8 / 10 minutes, if it is done manually it will last between 15 and 17 minutes
    7. We spread the table with a little oil, turn the dough over and let it relax without moving for 10 minutes
    8. Next we make the folds to reinforce the dough
    9. We put the dough in a container greased with oil, cover with transparent film and wait for it to double in size for about 2 hours at room temperature
    10. Sprinkle the table with plenty of corn grits, turn the dough over and sprinkle it generously with grits, divide it into 2 parts with a spatula
    11. We start to spread the dough from the sides, then towards the center we turn it over and transfer it to a tray greased with oil we will finish adjusting it to the size of the tray
    12. We add homemade tomato sauce, cook in a hot oven for 12/13 minutes at 240 °C / 464 Fahrenheit
    13. While the pizza is cooking, cut the tricolor cherries in half with basil and extra virgin oil and a pinch of salt
    14. Take the pizza out of the oven, place it on a wire rack for 2 minutes to dissipate the moisture, and then cut it into squares and form a pizza mille-feuille with cherry tomatoes and buffalo mozzarella.
