How to make crepes dough

CREPES, also called CRESPELLE or CREPS, are made with a dough based on eggs, butter, milk, water, salt and flour and are cooked in a crepe, a pan with a very low edge, thanks to its neutral flavor they are ideal to highlight SALTY or SWEET fillings.

  • 1. Melt the butter in the microwave for 25/30 seconds
    2. In a bowl we beat the eggs with a rod
    3. Add the melted butter, milk, water, salt, and sifted flour, mix well and blend with an immersion blender for 20 seconds to remove any lumps.
    4. Cover the bowl and store in the fridge for at least 45 minutes (the dough can be made overnight)
    5. Heat a 28 cm diameter crepe maker, spread with butter or oil and pour 125 GR of dough moving the crepe maker to cover the entire surface, we can help ourselves with the T-shaped wood to level the thickness of the dough
    6. Turn the dough over with a spatula, finish cooking (1-2 minutes per side) (it is advisable to lightly grease the crepe maker before cooking the following crepes again)
    Once the crepes are cold, they can be kept in the fridge covered with transparent film while waiting to be filled.
