SALSA PESTO GENOVESE

  • 1. Introduce all the ingredients except the xanthan that we will add at the end in the glass blender.
    2. We begin to beat at the minimum speed and we will increase the speed progressively until we get a smooth sauce without lumps.
    3. We try the sauce that is to our liking
    4. If we want a thicker sauce we can add a pinch of xanthan and beat at medium speed
    5. (xanthan is a vegetable thickener that is activated in cold or heat, it has a very high thickening power, it is advisable to add a very small amount at a time until the desired texture is achieved)
    6. We will keep our sauce covered in glass jars in the fridge for a maximum of 5 days
