  • Cook the Sp√§tzle: Cook the Sp√§tzle following the package instructions if purchased, or prepare them homemade if you wish. If you make them homemade, boil salted water in a large pot and add the Sp√§tzle. Cook them until they float to the surface, indicating they are ready. Then, drain them and set them aside.
    Sauté the speck, mushrooms and sage: In a large skillet, melt the butter over medium heat. Add the speck and sauté until golden and crispy. Then, add the mushrooms and sauté until tender. Add fresh sage leaves, toasted pine nuts and minced garlic, and sauté for another minute.
    Prepare the sauce: Pour the chicken broth and heavy cream into the pan with the sautéed ingredients. Simmer for a few minutes until the sauce thickens. Add salt and pepper to taste.
    Mix with the Spätzle: Add the cooked Spätzle to the pan with the sauce and sautéed ingredients. Mix well so that they are impregnated with the flavors of the sauce.
    Serve: Serve the dish on individual plates, sprinkling grated Parmesan cheese on top if desired. The combination of flavors and textures is simply delicious.
    This dish is a delicious variation on Spätzle with a hint of smokiness from speck, depth from mushrooms, and fragrance from sage.
