How to make salty crepes stuffed with vegetables

Today we are preparing a very easy and quick recipe to make, the SALTY CREPES can be prepared in advance and kept in the fridge, for the filling we will use FRESH VEGETABLES that are in season or the one that we like the most and we will mix them with a rich BECHAMEL SAUCE enriched WITH PARMESAN CHEESE

  • Prepare the dough for the crepes
    1. Wash and cut the vegetables into small pieces (potatoes, broccoli, peppers and aubergines)
    2. In a skillet add the oil and vegetables and cook over medium heat for 8/10 minutes
    3. While preparing the béchamel with cheese
    4. Mix the vegetables with a little béchamel and reserve
    5. When we have all the crepes ready, we distribute the filling in the middle of the crepes and close (watch video)
    6. Cover with béchamel and a little grated Parmesan
    7. Bake in a hot oven for 8/10 minutes at 180 °C / 356 °F or until you get the desired gratin
