How to make vegetarian salty cake

In this recipe we will use homemade pizza dough made in advance and stored in the fridge or freezer as the base of our cake. For the filling we will use typical Italian flavors: aubergines, tomato sauce with basil, provolone cheese, mozzarella, oregano and we will bake everything together to merge these delicious ingredients

  • 1. We start by cutting 1 large aubergine into a half cm cube and add oregano, ground garlic and a trickle of oil, mix well and place it on a long tray and bake for 25-30 minutes at 180 °C / 356 °F
    2. With a whisk, joyfully beat four eggs, add the grated mozzarella, a little Parmesan powder and mix until all the ingredients are fully incorporated.
    3. Roll out a 280 GR ball of dough to a diameter of 28-30 cm, line a mold with parchment paper and place your dough (you can also use puff pastry or empanada dough)
    4. With a spoon we distribute the homemade tomato sauce on the bottom, add the aubergines, sprinkle with parmesan powder and cover with the provolone cheese
    5. Add the beaten egg mixture, sprinkle with a little Parmesan and finish with Cherris tomatoes cut in half
    6. Bake for 25 -30 minutes at 180 °C / 356 °F on medium height level
    7. We remove from the oven, wait 5 minutes and unmold
