  • 1. In a casserole, brown the onion with oil, after 3/4 minutes add the sliced ​​mushrooms and continue cooking for 3/4 minutes
    2. Add the rice and toast for 2 minutes
    3. We wet with white wine, mix and once the alcohol has evaporated
    4. We continue cooking the rice adding the hot vegetable broth little by little without stopping stirring
    5. After 15/16 minutes, add the thinly sliced ​​asparagus and cook for 2 more minutes
    6. Turn off the heat, add grated Parmesan cheese, the burrata, rocket leaves and lemon zest
    7. We bring our casserole to the table in full view of our diners and butter the rice, breaking up the burratas, mixing well until all the ingredients are well incorporated and the rice is creamy.
