    2. We begin to beat at the minimum speed and we will increase the speed progressively until we get a smooth sauce without lumps.
    3. We will keep our sauce in the fridge for a maximum of 5 days or we can freeze it for 3 months (we will defrost it in the fridge for 24 hours before using)
