How to make vegetarian calzone

Today we prepare with our homemade dough fermented in the fridge for 24/36 hours, a delicious VEGETARIAN CALZONE, a different way of eating pizza.

We will fill our calzone with FRESH VEGETABLES cooked al dente, mozzarella fior di latte and fresh basil.

  • We turn on the oven at maximum power
    1. Cut red pepper, carrot, zucchini, sauté with a little oil and cook the vegetables (they have to be al dente and we can use the vegetables that we like the most) add sun-dried tomatoes and artichokes in olive oil.
    2. Sprinkle 1 250 GR ball of dough, already fermented and ready for use (we have taken the dough out of the fridge 1 hour before and left it at room temperature) with corn grits and roll it out with our hands or with a rolling pin until get a circle with a diameter of 30 centimeters
    3. Gently transfer the dough onto a parchment paper suitable for baking
    4. Place in one half, mozzarella cheese, vegetables, fresh basil
    5. Fold in half and close the edges very well so that during baking our calzone inflates well and is very beautiful
    6. Bake on a STONE for 11/12 minutes at 240 °C / 464 °F.
    7. We will take out our calzone, add a little ricotta cheese, decorate with the sautéed vegetables, slices of fresh asparagus and dried tomato powder
