  • 1 Preparation of the porcini: If you use fresh porcini, clean them with a damp cloth and cut them into thin slices. If you use dried porcini, hydrate them in warm water for about 15-20 minutes, drain them and cut them into slices.
    2 Cooking the pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Then, drain it and reserve a cup of the pasta cooking water.
    3 Sauté the porcini: In a large skillet, heat the olive oil and butter over medium-high heat. Add the porcini and sauté for about 5-7 minutes until golden and tender. Then, add the garlic and sauté for 1-2 minutes until fragrant.
    4 Deglaze with wine: Pour the white wine into the pan and stir, allowing the alcohol to evaporate and the wine to reduce by half.
    5 Add broth and cream (optional): Add the chicken or vegetable broth to the pan and, if you want a creamier sauce, the heavy cream. Simmer for a few minutes until the sauce begins to thicken. Add salt and pepper to taste.
    6 Mix with the pasta: Add the cooked pasta to the pan with the sauce and porcini. If the sauce is too thick, you can add a little of the reserved pasta cooking water to loosen it. Stir well so that the pasta is coated with the delicious porcini sauce.
    7 Serve: Serve the pasta with porcini on individual plates, sprinkle grated Parmesan cheese and chopped fresh parsley on top. Ready to enjoy!
