Today we prepare a PARMIGIANA PIZZA a little different from the classic recipe. We will start with an AUBERGINES CREAM, mozzarella fior di latte and a few drops of homemade tomato sauce and we will finish with grana padano sauce and fresh basil oil

Instructions
 

  • 1. We take our dough with fermentation of 24/36h from the fridge and leave it for 30 minutes at room temperature
    2. With the help of a pizza spatula we remove the dough from the fermentation vat
    3. Sprinkle generously with corn grits and roll out with your hands until you get a 28/30 centimeter disk
    4. We distribute eggplant sauce, mozzarella and tomato drops
    5. Bake for 5/6 minutes at 250 °C /482 °F on a special stone for ovens
    6. We finish with cheese sauce, grana padano and fresh basil oil
