Parmesan cream is a tasty sauce that is prepared by adding cheese, the perfume and the intense flavor of the cheese will enrich the classic bechamel sauce giving an extra touch to our recipes.
To make a variant for vegan / vegetarian recipes, we can replace the butter with margarine or extra virgin olive oil and the milk with vegetable milk: oatmeal or soy.
1. In a saucepan with high edges, melt the butter or margarine over medium-low heat.2. Add the flour and mix with a rod3. Cook for 2 minutes (until the dough begins to have a golden color—hazelnut)4. Add the hot milk little by little, mixing quickly with the hand rod5. We cook our sauce over low heat until it thickens (5-6 minutes)6. Remove the saucepan from the heat, add the Parmesan cheese and mix quickly until fully incorporated into the sauce.7. If there are any lumps or it is very thick, we can add a little milk and give it a touch with a blender until we get the desired texture.8. Cover with transparent film and reserve (the transparent film has to touch the bechamel so that there is no air left in the middle and the yellow crust does not form)
