How to make a integral poolish / natural ferment to improve our homemade dough

Today we will learn to make INTEGRAL POOLISH, a natural pre-ferment to improve our homemade doughs, using wholemeal flour we will get healthier pizzas, focaccias and breads with quality nutrients and our doughs will be more digestible and tasty.

  • 1. We dissolve the fresh yeast in the water.
    2. We add it to the wholemeal flour.
    3. Mix with a spoon until all the ingredients have come together homogeneously.
    4. Clean the edges with a spatula, cover and store in the fridge for 24/36 hours before using it in the chosen recipe.

With this recipe we will obtain 800 GR of Poolish, the base to make 2 pizzas in a 30*40 cm tray, enough pizza for 4/6 people
