  • 1. In a bowl add sugar, zest of 1 lemon, zest of 1 orange, ricotta, saffron, eggs and milk, mix well with a whisk until obtaining a silky cream.
    2. Add the sifted flour and the dessert yeast and mix well with a tongue until obtaining a smooth dough without lumps
    3. Cover with transparent film and reserve for 30 minutes in the fridge
    4. Whip the cream with a little sugar and reserve it in the fridge inside a disposable piping bag
    5. We heat a high-sided pot with plenty of sunflower oil, with 2 spoons we form a ball the size of a walnut, we fry until our fritters acquire a nice brown color 5 / 6 minutes
    6. Drain on an absorbent paper and reserve
    7. Once cold, fill with the whipped cream (With the tip of a knife we ‚Äč‚Äčmake a small hole in the fritters and fill)
    8. Sprinkle with a little icing sugar
