How to make focaccias / pizza bread with homemade tomato sauce

With the same dough you can prepare many recipes: sweet and salty PIZZA / BREAD. Today we prepare FOCACCIAS / DOUGH with MIX OF FLOURS AND POOLISH seasoned with homemade express tomato sauce without cooking and red onion seasoned with spices.

  • 1. Dissolve the fresh yeast in a bowl with the water
    2. Add the flour, the soy flour and the wholemeal poolish
    4. Mix with a mixer with a rod to knead for 10 minutes
    5. Add the fine salt
    6. We continue mixing with the mixer for 8 / 10 more minutes, until we get a smooth dough without lumps
    7. We grease the work table with oil, turn our dough over, stretch it out and let it relax without touching it for 15 minutes
    8. Next we will work the dough to give the dough more strength (watch video)
    9. Cover and let ferment for 1 hour
    10. Divide the dough into 4 parts of 250 GR each to make focaccine in round molds and 1 part of 800 GR to make a classic focaccia tray. We form round and tight balls.
    11. Cover and let ferment for 2 hours
    12. Col the tips of the fingers we open the dough slightly and place it inside the molds previously greased with oil
    13. Cover and let ferment for 2 hours
    14. Prepare the tomato sauce and red onion with spices
    15. We distribute the tomato sauce in 2 molds and the onion in 2 molds and bake for 15/16 minutes at 250 °C /464 °F static mode in the lowest part of the oven on top of the special stone for ovens
    16. We put our focaccias on a rack to dissipate the humidity for 5 minutes
    17. Now we can cut and enjoy
