How to make focaccia with soy flour and whole wheat poolish

Today we are preparing a delicious HOMEMADE FOCACCIA with EXTRA VIRGIN OLIVE OIL and MALDON SALT flakes, we will use a super rich and healthy DOUGH made with SOY FLOUR and INTEGRAL POOLISH FERMENTED 48 HOURS.

  • 1. Dissolve the fresh yeast in a bowl with the water.
    2. Add the strong flour, the soy flour and the whole wheat poolish.
    4. Mix with a mixer with a dough whisk for 10 minutes.
    5. Add the fine salt
    6. We continue mixing with the mixer for 8 / 10 minutes more, until we obtain a smooth dough without lumps.
    7. Grease the work table with oil, pour our dough, lengthen it and let it relax without touching it for 15 minutes.
    8. Next we will work the dough to give more strength to the dough (watch video).
    9. We will put our focaccia dough to ferment in an oiled container, covered and sheltered from drafts until it doubles in size (2/3 hours).
    10. Sprinkle the table with corn semolina, pour the dough and divide it into 2 baking trays greased with oil.
    11. Cover and leave to ferment for 60 minutes (while heating the oven at maximum power).
    12. With the tips of the fingers we make the typical holes of the focaccia.
    13. With a vaporizer, sprinkle water, oil, extra virgin olive oil and finish with a generous pinch of Maldon salt.
    14. Bake for 15 /16 minutes at 250 °C /464 ºF static mode in the lowest part of the oven on the special stone for ovens.
    15. Put our focaccia on a rack to dissipate the humidity for 5 minutes.
    16. Now we can cut and enjoy our delicious focaccia.
