How to make Easter pizza with spinach

The EASTER CAKE / PIZZA is a typical GENOVAN dish that is usually made on EASTER dates, it is a hybrid between an empanada and a quiche stuffed with vegetables and egg.

Today I present to you the ideal EASTER PIZZA to TAKE on a PICNIC, since it can be filled with what we like best and can be prepared in advance and it is not necessary to heat it before eating it.

  • 1. We knead all the ingredients in a bowl until we get a smooth dough without lumps (kneaded by hand, watch video)
    2. We form 6 balls of 125 GR each (with the leftover dough we can make a focaccia or freeze it in portions)
    3. Cover and let ferment at room temperature until doubled in size (1:30 / 2 hours)
    4. Sprinkle the dough with semolina corn and roll out the dough with a rolling pin until it reaches a diameter of 20/23 centimeters and a thickness of 2 millimeters.
    5. Let the dough rest, stretched out and covered, for 20/30 minutes (while we heat the oven at maximum power, heat up and down)
    6. With a fork we pierce the dough so that it does not inflate when baked, we brush it with oil
    7. Bake for 3/4 minutes at 250 °C /464 °F static mode in the lowest part of the oven on top of the special stone for ovens
    8. We take out and put our focaccia on a grid to dissipate the humidity for 5 minutes (we repeat the same with all the masses)
    9. Distribute the fresh cheese with black sesame on the base of the pizza, add the sautéed fresh spinach, grate the hard-boiled egg, place a disc of crispy dough on top and cut
