How to make pizza and focaccia dough with autolysis

Today we are preparing a delicious HOMEMADE DOUGH with high HYDRATION / AUTOLYSIS and SLOW FERMENTATION for 24/36 hours in the fridge.

This dough will serve us to prepare PIZZAS / CALZONES / FOCACCIAS AND BREADS only by changing the format and the ingredients we will have different equally delicious products.

TIPS: (keeping the pizza dough in the fridge allows us to optimize time / conservation and when preparing it we will only have to take it out of the fridge, wait for it to warm to room temperature, DECORATE IT TO OUR TASTE, BAKE IT AND ENJOY IT)

DOUGH for PIZZA and FOCACCIA with AUTOLYSIS

Instructions
 

  • 1. We will start by adding fresh yeast dissolved in water and virgin olive oil to our dough prepared a few hours before with the autolysis method
    2. With the help of a mixer with a rod to knead, mix for 10 minutes
    3. Add the salt
    4. We continue mixing for 10/12 more minutes until we get a smooth elastic mass without lumps
    5. We grease the work table with a little oil, turn our dough over, stretch it out with our hands and let it relax without moving for 15 minutes
    6. Next we work it to give more strength to the dough (watch video)
    7. Store our dough in a container greased with a little oil, cover and store in the fridge for 24/36 hours
    8. We take our dough out of the fridge, we turn it on a table sprinkled with corn semolina, we will make some reinforcement folds (see video below the recipe)
    9. We leave our dough again in the fermentation vat at room temperature for 3 hours (it has to double its volume)
    10. We already have our dough ready for pizza and focaccia on a tray, we will cut pieces of 750 grams and for individual pizzas of about 250 grams
