How to make DOUBLE DOUGH PIZZA stuffed

Today we prepare a homemade DOUBLE DOUGH PIZZA, very tasty and doubly crispy, baked on the stone, stuffed with fresh spinach and Parmesan cheese. One of the great advantages of making pizza is being able to have the dough prepared in advance, today we will use a dough with 24 / 36 hours of slow fermentation in the fridge. We can enjoy our stuffed pizza hot or cold as a pizza bread sandwich.

  • 1. We turn on the oven at maximum power so that it heats up
    2. We take the dough out of the fridge so that it warms up to room temperature
    3. We prepare the ingredients for the chosen filling (it can be filled with whatever we like the most, it is preferable to use ingredients that need little cooking or previously cooked)
    4. We clean and dry the fresh spinach and grate the Parmesan cheese with 24 months of healing.
    5. Stretch the dough sprinkled with corn semolina with the help of a rolling pin until we reach the size of the wooden shovel and repeat the process with the second dough that will serve to close our pizza.
    6. Fill with fresh spinach, sprinkle with Parmesan cheese and finish with a dash of extra virgin olive oil.
    7. Place the 2nd dough and close by folding the edges slightly inwards.
    8. Brush with oil and bake on a special stone for pizza and bread for 10-12 minutes at 250 °C / 482 °F with heat up and down until the desired color is achieved.
    9. We take out of the oven and we can enjoy our stuffed pizza hot or cold as a pizza bread sandwich.
