The freshly baked cookies smell delicious. Today we are preparing a very easy and quick recipe to make, COCONUT  BISCUITS, ideal to accompany a coffee / tea or infusion.

  • 1. We beat the soft butter very well (or pass it through the microwave for 10 seconds) together with the sugar
    2. Add the mascarpone cheese, oil, egg and vanilla aroma, mix
    3. Next we add the coconut flour, the sieved normal flour / cornstarch and the yeast for dessert
    4. Mix well and let rest in the fridge for 1 hour
    5. We estimate the dough with a rolling pin until we get a thickness of 1/2 centimeter and with some molds we form the cookies, with the excess we form some balls the size of a hazelnut and crush it slightly
    6. We place all the cookies on a baking paper
    7. Bake in a hot oven for 10/12 minutes in static mode (up and down heat) at 180 °C / 356 °F
    8. We wait for them to cool down and decorate the stars with icing sugar and the little balls with cocoa
