  • 1. Heat the milk, salt, butter, sugar and lemon zest
    2. Bring to a boil, add the previously sifted flour at once and stir continuously with a wooden spoon until the dough separates from the walls
    3. Turn off the heat and let cool for 5 minutes
    4. Add the whole eggs 1 by 1, mixing (until the egg has been incorporated into the dough, we do not add the next one)
    5. Heat a high-sided pot with abundant sunflower oil, fry until our fritters acquire a nice brown color, 5/6 minutes
    6. Drain on an absorbent paper and reserve

Custard cream

  • 1. Boil the milk with the lemon/orange peel and the cinnamon
    2. In a bowl, beat the egg yolks, cornstarch and sugar with a whisk
    3. Strain the hot milk and pour it little by little, mixing with the whisk together with the egg cream
    4. Return to the heat and when we begin to see bubbles, turn off the heat, mix vigorously with the whisk (we will see that the cream thickens) cover with plastic wrap so that it does not dry out and reserve (if at time to fill the cream is very thick we can dilute it with a little milk)

  • 1. Fill a pastry bag with the pastry cream
    2. With the tip of a knife we ​​make a small hole in the fritters and fill with the cream
