  • 1. We dissolve the fresh yeast in water
    2. Add the multigrain poolish, flour and knead for 5 minutes
    3. Add the salt and continue kneading for 7/8 minutes, until you get a smooth dough without lumps
    4. Grease the table with oil and let the dough relax for 15 minutes without moving
    5. We wet our hands with water and work the dough to give it more strength
    6. Let the dough relax again for 15 minutes without moving
    7. With wet hands we make more reinforcement folds
    8. We store the dough in a container greased with oil, cover and let it ferment until doubled in size (more or less 2 hours)
    9. Dust the table and the bread baskets with flour, turn the dough over and divide it into 2 parts
    10. Roll up the dough and place it in the covered fermentation baskets until doubled in size (more or less 2 hours)
    11. Dust the dough with flour and turn it onto a baking tray lined with paper, make some cuts with a blade
    12. Bake for 20 minutes at 250 °C / 464 °F static mode in the lowest part of the oven and then lower the temperature to 200 °C / 392 °F and continue cooking for 15 / 20 minutes raising the tray halfway from the oven.
    13. We put our breads on top of a rack to dissipate the moisture for 5 minutes
