How to prepare BIGA, a natural ferment of Italian origin that will improve our pizza and bread dough

Today we will learn to make: a pre-ferment of Italian origin, which is made up of water, flour and fresh yeast

One of the advantages of adding Biga to our homemade pizza, focaccia and bread doughs is to reduce the amount of yeast in fermentation, in this way our pizzas / Focaccias and breads will be much more digestible and tasty.

Instructions
 

  • 1. We dissolve the yeast in the water.
    2. We add little by little to the flour and with the help of a fork we mix until the complete absorption of all the water.
    3. We break the largest pieces with our hands.
    4. We cover, leaving the lid slightly open, and let our BIGA ferment at a constant temperature of 19º/20° / 66ºF - 68ºF between 14 and 16 hours or in the fridge between 24 and 36 hours, (if we are going to use the biga kept in the fridge, it is recommended to let it temper at room temperature for 2/3 hours before continuing with the chosen recipe)

With this recipe we will obtain 620 GR of BIGA, the base to prepare 2 pizzas in a 30*40 cm tray, enough pizza for 4/6 people
