  • 1. Pour the balsamic vinegar into a saucepan along with the brown sugar or honey (sugar or honey is optional but using it will give the sauce a nice sweet touch)
    2. If we want a more flavored reduction, ideal for meat and fish: add juniper berries, cloves, cinnamon, pink peppercorns or a sprig of fresh rosemary (we can flavor it with the spices and aromatic herbs that we like the most)
    3. For salads and vegetables, I recommend reducing them in the classic way (balsamic vinegar and sugar or honey), since when dressing we can make vinaigrettes using our balsamic reduction together with seasonal ingredients.
    4. We take the pot to the fire and cook over medium-low heat for about 30-40 minutes or, in any case, until the mixture has reduced its volume by half.
    5. If at the beginning we have added 2 cups of 250 ml we have to have 1 cup of 250 ml left
    6. Once the sauce is reduced, we will remove the spices, the sauce will seem liquid: don't worry! As it cools, it will thicken.
    7. Keep the reduction or balsamic sauce in the fridge, in a glass container with a lid or in a sauce bottle and use it according to your taste.
