What can be done with zucchini?

ZUCCHINI SAUCE is a tasty and healthy low-calorie condiment, ideal for seasoning PASTA / RISOTTO AND PIZZA as an alternative to the classic tomato sauce

TIP: courgettes, being a vegetable that contains a lot of water, cook quickly and we can take advantage of the oven while it heats up until it reaches the desired temperature and then bake our favorite pizza or focaccia recipes, we can also cook the courgettes with the residual heat with the oven turned off once finished.

We can keep it in a container in the fridge for 3 days or we can keep it vacuum-packed for 10 days or freeze it.

  • 1. Wash and cut the courgettes into 2 cm slices
    2. Add oil, salt, black pepper, oregano and mix well
    3. Place baking paper on a tray to prevent them from sticking to the tray
    4. If the vegetables are packed too tightly together, they won't be very crispy or browned. Give him space.
    5. Bake for 12 / 15 minutes at 180 °C / 356 °F (the vegetables must be al dente)
    TIP: Your vegetables are done when you can easily pierce them with a fork and they are just barely browned. If you are going to cook several types of vegetables at the same time, I recommend making trays with the same type of vegetables to make it easier to monitor cooking and to be able to take it out of the oven at its optimum point.
    6. Stir from time to time, especially if your oven doesn't bake evenly
    7. take it out of the oven, add a little oil and salt to your liking and blend until you get a smooth texture without lumps
    8. Store in a container and keep in the fridge for 3 days if you want it to last longer or freeze the sauce without ice crystals forming. I RECOMMEND YOU KEEP IT VACUUM
