How to make a delicious appetizer with a Mexican touch

Today we will revisit a classic Mexican recipe, we will replace the nachos with potatoes and add mozzarella, semi-dried tomatoes and fresh basil to give it a Mediterranean touch.

We will get a very easy and cheap starter to make, ideal to share or enjoy as a single dish in a healthy lunch or dinner, this appetizer is ideal for vegetarians and many children like it for its flavor and very striking colors.

  • 1. Wash and dry the potatoes
    2. We cut it with the skin in a 2 centimeter square and store it in a container
    3. Add oregano / rosemary / a little curry powder / ground garlic / spicy paprika - salt and extra virgin olive oil and mix well until all the ingredients are incorporated into the potatoes
    4. put them in a dish and bake for 30 to 35 minutes at 200°C / 390°F, mixing every 10 minutes, the last ten minutes we will put the grill in the oven to give it a crispy touch
    5. We already have our potatoes ready, now we can continue with the recipe to enjoy right away or reserve the potatoes to make our recipe later, since all the ingredients can be prepared in advance
    6. While the potatoes are cooking, wash and dry the vegetables well and cut the peppers and onion into
    squares of 2 millimeters and the Cherry tomatoes in quarters to our cut vegetables, we add
    semi-dried tomato cut into small pieces and a few fresh basil leaves a pinch of salt a generous splash of extra virgin olive oil
    7. Mix well so that all the flavors blend well and set aside.
    8. With the pulp of 4 avocados, the juice of two limes and a pinch of salt, we prepare the avocado cream and we will cover it so that it does not oxidize
    9. We distribute our potato in a baking dish, add grated mozzarella and bake for four minutes at 200°C / 390°F, until the mozzarella is melted, add the avocado cream on top of the cut vegetables, if you like it spicy you can add jalapeño they are wonderful
    10. Serve and enjoy
